Baked and stuffed chicken breast the easy way
It is as good as it sounds. And even easier to make. There’s only a few ingredients and those are in almost any grocery store. Although it’s true there are many different recipes for stuffed chicken breast, there’s just as many good reasons to try them all. And this one is no exception. It’s quick, and takes very little prep time.
With this in mind, there are only three basic ingredients. However, it’s possible to substitute ingredients. Furthermore, this recipe is best when adapted to individual preferences. This variation is the basic recipe and only requires two pounds of boneless skinless chicken breast, one box of instant cornbread stuffing mix, and one can of diced tomatoes.
It begins with the chicken. One or two pounds of boneless skinless chicken breast. Two pounds should be about three medium sized chicken breasts. After rinsing and a quick pat dry, they should be ready for the pocket. Therefore, take a knife, and make a slot down the length of one chicken breast. It might require a couple of passes with the knife, to get a deep enough pocket. Nevertheless, continue until all the chicken is ready for the next step.
Baked and Stuffed Chicken Breast
Remember to wash your hands immediately after handling the chicken, and before handling anything else. Additionally, disinfect counters and any surfaces the chicken touches, after finishing the prep. Now, once each chicken breast has a pocket, it’s time to stuff it with the cornbread stuffing. Furthermore, no need to prepare the stuffing. In fact, it should be dry and straight from the box. Hence the easy prep.

Using a tablespoon, continue stuffing each chicken breast with the cornbread stuffing. Likewise, if it is overflowing, and starting to fall out, that’s when to stop the stuffing. Additionally, any leftover stuffing that falls into the baking pan can remain there. In fact, it’s a nice flavor boost when the stuffed chicken breast comes from the oven.
Now for the last ingredient. And it’s the diced tomatoes. Therefore, one tablespoon for each chicken breast. The tomatoes are stuffed inside the pocket. Along with the cornbread stuffing. There’s no wrong way to do it. Just stuff it, and then fold the chicken around the stuffing. Lay it in a baking pan, and do the same for the remaining chicken.
An Easy Recipe
That is all for the preparation. Lightly salt and pepper each of the stuffed chicken breast pieces. Make sure the baking sheet has sides. It should be a baking pan with a minimum of two inch sides. Cover everything with aluminum foil and place in an oven that has been preheated to 400 degrees.
Ingredient list:
- Between one and two pounds of boneless skinless chicken breast.
- One box Stove top stuffing mix (cornbread stuffing mix)
- One can diced tomatoes
Bake from 40 to 60 minutes depending on the thickness of the breasts. Make sure the internal temperature reaches 165 degrees Fahrenheit or 74 degrees Celsius. After removing from the oven, let the pan sit covered for five minutes. Then, remove the aluminum foil, for a juicy and tender stuffed chicken breast dinner. Thanks for reading.
